🇭🇰 𝙃𝙤𝙢𝙚 𝙨𝙩𝙮𝙡𝙚 𝙛𝙧𝙞𝙚𝙙 𝙗𝙚𝙚𝙛 𝙧𝙞𝙘𝙚 𝙣𝙤𝙤𝙙𝙡𝙚𝙨

呢排都唔知煮咩好😭冇時間又冇idea🥹突然間勁想食乾炒牛河,原來好多年都冇煮過,即刻開工~~所有材料都係網上街市買🤣如果買唔到河粉,其實我諗過可以用烏冬代替😂😆唔係廣告,但係呢一支醬油每次攞嚟炒麵炒烏冬都好食!!!佢個味係甜嘅老抽再加生抽^_^
材料: 2人份
河粉 400g
和牛片或牛冧肉 200g
洋蔥 半個
韭菜 20g
銀芽 100g
蔥段 適量
調味料:
生抽 2.5湯匙
老抽 1湯匙
糖 1茶匙
鹽 1/2茶匙 (自己再加如果唔夠)
或4湯匙鉅利醬油加少少鹽
牛肉醃料:
老抽 1茶匙
生抽 2茶匙
糖 1/4茶匙
水 2茶匙
麻油 1/2茶匙
生粉 1茶匙
油 1湯匙

做法:
1) 牛肉逆紋切薄片,用醃料醃約15分鐘備用,醃肉時候油最後先落~
2) 蔥和韭菜切段,洋蔥切粗絲,芽菜搣去根部洗淨備用
3) 調味料攪勻備用
4) 熱鑊下油放入牛肉每面煎至半熟盛起備用
5) 同一隻鑊下油,放入洋蔥,芽菜和韭黃炒香,拿起備用!再放入河粉炒至微微金香,倒入調味料炒至乾身,再放入其他材料和蔥段炒勻即成!



Ingredients (2 servings):
- Ho fun rice noodles 400 g
- Wagyu slices or beef 200 g
- Onion 1/2, chives 20 g, bean sprouts 100 g, scallions as needed
Seasoning:
- Light soy 2.5 tbsp, dark soy 1 tbsp, sugar 1 tsp, salt 1/2 tsp (adjust)
Alt: 4 tbsp Koo Li soy sauce + a little salt.
Beef marinade:
- Dark soy 1 tsp, light soy 2 tsp, sugar 1/4 tsp, water 2 tsp
- Sesame oil 1/2 tsp, cornstarch 1 tsp, oil 1 tbsp
Steps:
- Slice beef against the grain; marinate ~15 min (add oil at last).
- Cut chives/scallions, shred onion; trim sprout roots and rinse.
- Mix seasoning.
- Sear beef in hot oil until half-cooked; remove.
- Stir-fry onion + sprouts + chives until fragrant; remove. Stir-fry noodles until lightly golden, add seasoning until dry, then add back all ingredients + scallions and stir to finish.
