蔥油涼拌鮑魚片 中式食譜

蔥油涼拌鮑魚片

呢排咁熱都唔想食啲熱辣辣嘅嘢煮😆今次整咗涼拌鮑魚!非常清新好食🥰新鮮鮑魚肉爽口鮮甜🩵呢度八隻南非鮑魚買咗$120~雖然size唔係好大,但係都算抵食!今次仲配搭咗日本青椒仔,用鹽同油煎一煎就放響底部,如果嫌麻煩可以就咁用青瓜片~

材料: (2人用)
新鮮鮑魚 8隻
青椒仔 10條
油 4湯匙
乾蔥頭 2粒
蒽 2扎
辣椒仔 2隻
蔥花 適量
蒸魚豉油 2湯匙

做法:

  1. 鮑魚清洗乾淨之後,放入滾水煮1分鐘(目的是為了更容易把鮑魚起肉),拿出來立刻放入凍水中!之後去殼,內臟和鮑魚嘴巴~鮑魚切片!
  2. 切了片的鮑魚放在滾水淥30秒!放入凍水降溫!
  3. 青椒仔用油煎一煎兩邊,之後可以加少少鹽!放在碟上,然後表面再放上鮑魚片!
  4. 油熱後加入乾蔥頭和蔥段,煮1分鐘成蔥油!倒在鮑魚表面!然後再加入蔥花,辣椒仔和蒸魚豉油即成~

Ingredients (for 2)

  • Fresh abalone (8)
  • Green peppers (10)
  • Oil (4 tbsp)
  • Shallots (2)
  • Ginger (蒽) (2 bundles)
  • Chili (2)
  • Spring onion (to taste)
  • Steamed fish soy sauce (2 tbsp) Steps
  1. Clean abalone. Boil 1 min, then transfer to cold/ice water. Remove shell, innards, and mouth; slice.
  2. Blanch abalone slices in boiling water 30 sec, then cool in cold water.
  3. Pan-fry green peppers on both sides with a little salt. Plate and top with abalone slices.
  4. Heat oil; cook shallots + spring onion 1 min to make scallion oil. Pour over abalone, then add spring onion, chili, and steamed fish soy sauce.
