龍蝦湯蠔仔泡飯

今次響超級市場買咗另一包龍蝦湯,都好好飲😬一於整個中式泡飯😍~Super easy comfort food只需要用電飯煲煲飯,煮好再加入湯內便可以,非常簡單方便快捷!要有潮州泡飯味道,就一定要有方魚,用魚骨煲一煲就成為湯底🥺蠔仔一粒粒好飽滿超好食✨

▶️方魚/大地魚乾可在街市乾貨店買到,魚肉撕下,再用油煎香,最後加在粥上,super tasty☺️

▶️豬肉碎要慢慢一路攪拌一路落!否則全部一次過落會一舊舊喔🥱

材料: (2-3人用)
白飯 2碗
免治豬肉 100g
蠔仔 300g
冬菇/本菇4隻
薑 1片
水 300ml
龍蝦湯 600ml
大地魚乾 1條 (或用1湯匙大地魚粉取代)
冬菜/唐芹/芫荽

豬肉醃料:
生抽 1湯匙
糖 1/2茶匙
米酒 1茶匙
麻油 1茶匙

做法:
1) 豬肉加入醃料醃5分鐘,冬菇用水浸淋切片,蠔仔用生粉洗淨
2) 大地魚乾把魚肉撕下,切小粒,用油煎香備用
3) 大地魚骨、龍蝦湯、水和薑一起煲滾之後繼續煮5分鐘,之後隔走大地魚骨!
4) 湯底先加入免治豬肉,然後再加入冬菇和白飯,煮大約5分鐘之後便可以加入蠔仔,繼續煮5分鐘,最後加入唐芹、芫荽和冬菜,再加入少許胡椒粉或鹽即成!

Ingredients (Serves 2-3)

  • 2 bowls cooked rice
  • 100g ground pork
  • 300g oysters
  • 4 mushrooms (shiitake/button)
  • 1 slice ginger
  • 300ml water
  • 600ml lobster broth
  • 1 piece dried fish (or 1 tbsp fish powder)
  • Winter vegetable/celery/coriander Marinade
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1 tsp rice wine
  • 1 tsp sesame oil Instructions
  1. Marinate pork for 5 minutes. Soak and slice mushrooms; rinse oysters.
  2. Fry torn dried fish until fragrant, then set aside.
  3. Boil fish bones, lobster broth, water, and ginger for 5 minutes; strain bones.
  4. Add pork to broth, followed by mushrooms and rice. Cook for 5 minutes, then add oysters and cook for another 5 minutes. Stir in winter vegetables and season before serving
