🦐𝙎𝙩𝙚𝙖𝙢𝙚𝙙 𝙚𝙜𝙜 𝙬𝙞𝙩𝙝 𝙥𝙧𝙖𝙬𝙣 𝙥𝙖𝙨𝙩𝙖 𝙖𝙣𝙙 𝙘𝙡𝙖𝙢𝙨

Steamed egg is always my fav comfort food at home♥️今次用了花甲加蝦膠!非常鮮甜好食😊再加夢王蛋!顏色靚💓鐘意可以用煮過蜆的水代替雞湯,但係又要等佢凍返冇咁多時間😂就咁用雞湯都超好食👌🏻再加錫紙去蒸!最後一定要淋滾油同豉油就好滑滑的💛
材料:
蛋 2隻
花甲 半斤
蝦膠 150g
雞湯 蛋的份量1.5-2倍 (或水加鹽代替)
蒸魚豉油 適量
滾油 2湯匙
葱花 適量
做法:
1) 花甲先加鹽浸一小時吐沙,不過優質花甲多數無乜沙!熱水煲滾,把花甲加入,一開殼立刻拿起!避免過熟!蝦膠塗在花甲上,可以用手指壓一壓~
2) 輕輕搞拌蛋,再加入雞湯,再用網篩過濾蛋液,倒入碟中,再放上花甲,裝蛋液的碟蒸一定要加蓋或錫紙,避免倒汗水沾上蛋面
3) 大火蒸4分鐘再轉中火蒸8分鐘
4) 蒸後可倒上蔥花和芫荽,再淋上滾油和豉油


Ingredients:
- 2 eggs
- 0.5 lb (250 g) clams
- 150 g shrimp paste
- Chicken stock (1.5–2× eggs) or water + salt
- Steamed fish sauce (shi you) to taste
- 2 tbsp hot oil
- Chopped scallions
Method:
1) Salt-soak clams ~1 hour; boil briefly, remove when they open. Spread shrimp paste over clams.
2) Beat eggs, add stock, strain. Put clams in a dish, pour in egg mixture (cover with lid/foil).
3) Steam on high 4 min, then medium 8 min.
4) Garnish with scallions and cilantro; drizzle hot oil and fish sauce.
