多汁炸雞翼配炸雞汁

做多個步驟炸雞翼勁Juicy🥹再整埋Jolibee嘅炸雞汁🐷點解要咁做係因為我唔明點解Jolibee無炸雞翼食🤣超好食!炸粉嘅材料比平時多,係因為想做厚啲嘅炸粉效果同埋味道豐富啲~my son’s fav!!!

➡️炸雞翼之前把雞翼浸在鹽水中,能夠令到雞翼的肉質更加嫩滑,而且吸收水份,炸過後的雞肉會非常之Juicy🙂‍↔️

炸雞翼材料:
雞翼 10隻
薑 2片
油 300ml
雞蛋 2隻
牛奶 100ml

炸粉:
麵粉 80g
生粉 40g
泡打粉 1/2茶匙
蒜粉 1茶匙
五香粉 1茶匙
Paprika powder 1茶匙
鹽 1/2茶匙
黑椒 1/2茶匙

  1. 雞翼加入薑和水,再加入一茶匙鹽!放在雪櫃浸兩小時~
  2. 炸粉材料攪拌均勻!雞翼和牛奶攪拌均勻!
  3. 雞翼先沾上炸粉,然後沾上蛋液,然後再沾上炸粉
  4. 熱鍋下游,中火把雞翼炸7至8分鐘至金黃色即成

炸雞汁材料:
牛油 40g,麵粉40g, 水250ml,濃湯寶雞肉味 半粒,黑椒 1/2茶匙,蒜粉 1茶匙,老抽 1湯匙,糖 1/2茶匙

做法:

  1. 牛油煮溶後,加入麵粉攪拌均勻至無粉粒,然後倒入水和濃湯寶,不斷攪拌均勻,然後再加入其他材料,細火煮至汁厚身即成!

Ingredients: 10 wings, 2 slices ginger, 300ml oil, 2 eggs, 100ml milk.

Breading: 80g flour, 40g cornstarch, 1/2 tsp baking powder, 1 tsp each (garlic powder, five-spice, paprika), 1/2 tsp each (salt, black pepper).

  1. Brine: Soak wings in water with ginger and 1 tsp salt; refrigerate for 2 hours.
  2. Prep: Mix breading ingredients. Whisk eggs and milk.
  3. Coat: Dip wings in flour \rightarrow egg wash \rightarrow flour.
  4. Fry: Deep fry in oil over medium heat for 7–8 minutes until golden.

Gravy Sauce

Ingredients: 40g butter, 40g flour, 250ml water, 1/2 chicken bouillon cube, 1/2 tsp black pepper, 1 tsp garlic powder, 1 tbsp dark soy sauce, 1/2 tsp sugar.

Method:
Melt butter and stir in flour until smooth. Add water and bouillon; stir well. Add remaining ingredients and simmer on low until thickened.
