孜然辣煮爆漿豆腐 中式食譜

孜然辣煮爆漿豆腐

上次去食木屋燒烤,叫咗佢個鐵板爆漿豆腐🩷好食係好食不過好似好多味精嘅感覺🙂‍↕️響屋企煮返個健康啲嘅版本!一定唔可以省卻孜然粉!!就冇咗個神髓🙂‍↔️PS其實爆漿豆腐唔係真係咁爆漿🤨🙂‍↕️用普通硬豆腐都得💞

材料: (2人用)
爆漿豆腐 1包
免治豬肉碎 150g
蒜蓉 2湯匙
蔥花 2湯匙
豆瓣醬 2湯匙
雞湯 150ml
糖 1茶匙
生抽 1茶匙
孜然粉 1茶匙
花椒油 1湯匙
芫荽 適量
辣椒 2條

豬肉醃料: 生抽1.5湯匙,老抽1茶匙,生粉1茶匙,麻油1茶匙,糖1茶匙

做法;
1) 豆腐切塊,熱鍋下油,加入豆腐煎香兩邊至金黃色,拿起備用
2) 免治豬肉加入醃料醃10分鐘
3) 熱鍋下油,加入蒜蓉和蔥花爆香,然後加入免治豬肉,用大火炒字變色和乾身!然後再加入豆瓣醬炒勻,倒入雞湯,生抽和糖!煮滾後加入豆腐!煮多大約2分鐘,便可以加入孜然粉在表面~再加油花椒油,芫荽和辣椒碎即成!

孜然辣煮爆漿豆腐

Ingredients (2 servings)

  • 1 pack molten tofu
  • 150g minced pork
  • 2 tbsp minced garlic
  • 2 tbsp chopped scallions
  • 2 tbsp doubanjiang
  • 150ml chicken broth
  • 1 tsp sugar
  • 1 tsp light soy sauce
  • 1 tsp cumin powder
  • 1 tbsp pepper oil
  • Coriander, to taste
  • 2 chili peppers

Marinade for Pork

  • 1.5 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp sugar

Instructions

  1. Cut tofu, fry in oil until golden, then set aside.
  2. Marinate pork for 10 minutes.
  3. Sauté garlic and scallions, add pork until browned. Mix in doubanjiang, then broth, soy sauce, and sugar.
  4. Add tofu and cook for 2 minutes. Sprinkle cumin, drizzle with pepper oil, and garnish with coriander and chilies.
