⭐️蒸肉餅鬆軟tips⭐️
▶️落生粉同咸蛋白!生粉本身可以鎖住肉汁同埋質感幼滑,蛋白就可以增加粘性 (不過我今次無加咸蛋白)
▶️舊肉嘅質素都好重要!如果成舊肉都係瘦肉落乜嘢都會實一實!肥瘦比例3:7 /4:6 左右!用梅頭肉就OK
▶️我覺得就咁用免治豬肉都OK,自己剁係會好食啲但係都麻煩啲😹如果要自己剁可以先切條再切粒先開始剁碎
▶️蒸最好攤薄大火蒸,我覺得攤薄係最好食,咁就唔會蒸過火而導致硬哂!
材料:
免治豬肉 300g
冬菇 2隻
馬蹄 2粒
土魷 1-2隻
葱花 適量
調味料:
生粉 2茶匙
生抽 1.5茶匙
鹽 1/2 茶匙
水 2-3湯匙
糖 1/2茶匙
麻油 1茶匙
胡椒粉 1/4 茶匙
做法:
1) 豬肉加入所有調味料向同一方向攪勻至黏身,冬菇和土魷浸淋後切粒!馬蹄去皮之後切粒!然後加入豬肉攪拌均勻!
2) 把肉放在碟上,大火蒸10分鐘,最後再加上蔥花即成!鍾意重味啲可以再加上熟油和豉油!
